Here is a recipe I recently made up that accomplishes this goal. I think it’s delicious, and super easy, so I thought I’d pass it along to all of my other busy-mom-friends. You can substitute many different ingredients and come up with similar results. This is just what I happened to have on hand. If you try it, tell me what you think.
Mish-Mash-Mexican Montage
Preheat oven to 400*. Mix beans, tomatoes, shredded chicken, sour cream, and cream cheese in pan. Stir over medium-high heat until simmering is achieved. Simmer for around 5 minutes. If it appears too runny, simmer some more or drain a bit. Pour ingredients into pie crust. Bake at 400* for 15 minutes or until edges of crust are golden brown. Remove from oven and top with cheese. O-lay!

Mmm… thanks! This sounds yummy, easy AND I actually have everthing in my pantry but the pie crust. We’ll give it a try, although I think you remember how picky Jay is… he’s absolutely worse than either Army or Aggie by a landslide. 😉
