Happy Memorial Day weekend! Awhile ago I asked for your favorite picnic friendly recipes and boy oh boy did you deliver! I thought it would be fun to compile all these recipes in one place. Enjoy!
Cold Corn Salad from Dreams of Perfection

Dice tomatoes, purple onion, cucumbers, basil, and add fresh corn. Drizzle with Italian dressing, stir, and chill until ready to serve.
Proscuitto Wrapped Asparagas from Conversations from the Cul-de-sac

16 spear(s) asparagus (about 1 bunch), trimmed
1 teaspoon(s) extra-virgin olive oil
pinch(s) salt
Freshly ground pepper to taste
2 (thin slices) prosciutto (about 1 ounce), cut in half lengthwise
Directions
Preheat grill to medium.
Toss asparagus with oil, salt, and pepper in a medium bowl. Wrap 1 length prosciutto around middle of 4 asparagus spears. Repeat, making 4 bundles. Oil grill rack. Grill asparagus bundles, turning once or twice, until asparagus is tender and charred in spots, about 10 minutes.

Cornbread Salad from This Blessed Nest

Ingredients
- 1 package (8-1/2 ounces) corn bread/muffin mix
- 1 can (4 ounces) chopped green chilies, undrained
- 1/8 teaspoon ground cumin
- 1/8 teaspoon dried oregano
- Pinch rubbed sage
- 1 cup mayonnaise
- 1 cup (8 ounces) sour cream
- 1 envelope ranch salad dressing mix
- 2 cans (15 ounces each) pinto beans, rinsed and drained
- 2 cans (15-1/4 ounces each) whole kernel corn, drained
- 3 medium tomatoes, chopped
- 1 cup chopped green pepper
- 1 cup chopped green onions
- 10 bacon strips, cooked and crumbled
- 2 cups (8 ounces) shredded cheddar cheese
Directions
- Prepare corn bread batter according to package directions. Stir in chilies, cumin, oregano and sage. Spread in a greased 8-in. square baking pan. Bake at 400° for 20-25 minutes or until a toothpick inserted near the center comes out clean. Cool.
- In a small bowl, combine mayonnaise, sour cream and dressing mix; set aside. Crumble half of the corn bread into a 13-in. x 9-in. dish. Layer with half of the beans, mayonnaise mixture, corn, tomatoes, green pepper, onions, bacon and cheese. Repeat layers (dish will be very full). Cover and refrigerate for 2 hours. Yield: 12 servings.
Marshmallow Fluff Fruit Dip from MommaKiss
In a blender or mixer, mix one jar of marshmallow fluff with 8ozs cream cheese. Serve with your choice of fruits.
Ham & Cheese Pinwheels from In the Military and on the Move

Spread chive or sundried tomato cream cheese over large flour tortillas. Place a slice of smoked ham over the tortilla. Roll up, chill for an hour, and then cut into slices.
Meat & Cheese filled Crescent Rolls
Take any cooked meat and cheese and place inside crescent roll. Roll up and bake according to package directions.

Chicken Salad Green Wraps from Pandora’s Box
Take your favorite chicken salad and wrap it up in a lettuce or escarole leaf. Secure with a green onion tie and serve.

Giant Roasted Marshmallows
I found these beauties in vanilla and strawberry at our local grocery store. The kids LOVE them. They are the equivalent of four marshmallows in one. So fun!

Just a note on the marshmallow fruit dip: You can also add a few sprinkles of cinammon to it and it tastes great! Definitely a favorite of mine…

I have one for asparagus…
In a zip lock baggie put your asparagus…drizzle olive oil, sea salt, lemon juice (dashes of all ingred.)…while the oven is heating up to 350…keep turning the baggie to make sure they're coated well… place on a baking sheet and cook for 15-20 mins…easy recipe and soooo good !!!
