I have been on a mission this year to balance my life and take on some internal DIY projects. Many of you tune in here for my tips on affordable decorating and easy DIY projects, but somewhere in the midst of sharing all of that home decor goodness I neglected my health, my friends, and ultimately my “life ingredients for happiness”. Eek! Well, no more. I’m determined to free up more time in my life for adventure, laughter, and the things I love–like good wine, dark chocolate, and cheese :). And yes, you CAN have those things in moderation while losing weight! I recently shared with you how I lost over 20 lbs, and I am working hard on losing at least another 10! Changing my eating habits has been by FAR the most difficult part of my weight loss journey. The working out part has been an adjustment but I actually look forward to exercising thanks to Zumba. Curbing my tremendous sweet tooth and choosing healthy snacks has admittedly been the biggest challenge for me. Plus, like most of you, I am crazy busy (could also read lazy), and I don’t like to spend a lot of time in the kitchen. I want to grab something yummy and get back to my project. I want the snack to be satisfying and filling, high in protein, moderate in carbs, reasonable in calories, and incredibly yummy!
So I created a super-simple snack that I absolutely love, and I think you might too! These Alpine Lace Cheese & Prosciutto Wrapped Apples with Sweet Mustard Dip are around 100 calories each and that includes the dip. One little apple wrap has 5 grams of protein and 11% of your daily recommended calcium! Read on to see how to make them and to see a cute bonus snack idea for the kiddos!
Alpine Lace Cheese & Prosciutto Wrapped Apples with Sweet Mustard Dip
For this recipe you will need two medium sized apples of your choice (I used Pink Ladies), 1 3oz package of proscuitto, and 1/2 lb of Alpine Lace Reduced Fat Swiss Deli Cheese. (If you’re unfamiliar with proscuitto, it’s is a dry-cured ham that is usually thinly sliced and ready right out of the package. You don’t have to cook it! It tastes a bit like a mild bacon.) Cut the apples using an apple corer slicer and place them in a lemon juice water bath. Just squirt some lemon juice in a bowl with a little bit of water and coat all the apples. This step is optional, but it will keep your apples from browning. Drain your apples in a colander and pat dry with paper towel. Slice your cheese and prosciutto in half to form two even strips. Take one strip of the cheese and wrap around your apple. Then take a strip of the prosciutto and wrap it around the cheese. That’s it! For the sauce, mix some spicy brown mustard, maple syrup, and a splash of flavored vinegar (I used peach) and enjoy!
Ingredients
- 2 medium-sized Pink Lady Apples (cored and sliced)
- 1 3 oz package prosciutto
- 1/2 lb Alpine Lace Reduced Fat Swiss Cheese
- 1 T lemon juice
- For mustard sauce combine:
- 1/3 C Brown mustard
- 2 T Maple syrup
- 1 t Flavored vinegar (peach or other of your choice)
Instructions

Alpine Lace Swiss Cheese Mouse Sandwich
Zephan, my 7 yr old, was in the kitchen while I was making up my apple wraps and helped me sample the goods. Oh my goodness, my boys are growing up so fast! Asher, my 9 yr old is already a bit too cool for food in the shape of animals. Sob! When did that happen? I want to cherish every moment of my little boys still being a little boys so decided to whip up a quick Alpine Lace Cheese Mouse Snack for Zephan. Zephan has celiac disease and therefore needs healthy snacks that are gluten free. This is the perfect healthy gluten free snack!
I cut a piece of Alpine Lace Swiss Cheese into a circle, placed a piece of turkey on top, and then used g/f crackers for the nose and ears. The eyes and nose are made from black beans and the mouth is half of a black olive. The whiskers are cut from a carrot stick and the bow tie is just a few baby spinach leaves. To cut the cheese into the cracker shapes, I just traced around a cracker with a knife. This snack may look like it took a bunch of time but in reality it took me less than 5 minutes to put together.
And just look at that reaction! Priceless. He had been asking me for a cookie right before I surprised him with this snack. This is sooooo much healthier for him than a cookie and he wasn’t disappointed!
