From the time I can remember, my mom has served up an amazing Christmas morning spread which always includes a grapefruit starter course, egg & sausage casserole, some sort of sweet carb, and French hot chocolate! This special breakfast was one more gift I always looked forward to receiving every year. I love carrying on the tradition with my own family and thought you might like to as well. We will be traveling over the holidays, so we celebrated our Christmas brunch a little early this year and I get to share it all with you!
Matt and I have been married over twenty years and most of my bakeware and cookware is at least that old as well. As a Christmas present to myself this year, I bought some much needed new holiday bakeware from Walmart.com and had it shipped right to my door. Gingerbread Pancakes Recipe
|1 1/2 cup flour||1/3 cup brown sugar|
|1 tsp baking powder||2 Tbsp molasses|
|1/2 tsp Baking soda||2 eggs|
|1/2 tsp salt||1/4 cup butter, melted|
|1 1/2 tsp pumpkin spice||1 cup milk|
In large bowl, mix dry ingredients together. In another bowl, combine eggs, milk, molasses, and melted butter. Pour this mixture into dry ingredients and blend. Batter will be lumpy. Preheat pan on medium-low heat for 2 minutes. Brush pan with shortening, butter, or baking spray. Fill cavities with 1-1 1/2 Tbsp of batter. Flip when golden brown with a non-metal utensil.
I am in love with Nordic Ware pans–especially during the holidays. The holiday pancake pans and bakeware make everything look so special. But most importantly, the batter releases from the pan and they turn out looking cute! So many bakeware pans I’ve owned in the past from less expensive brands have been difficult to use and create a mess. Not so with Nordic Ware! I just follow the instructions included on the packaging and my baked goods turn out cute every time.
One tip I have for you is to resist the urge to overfill the pan cavities with batter. One tablespoon of batter was really all it took to create beautiful pancakes. I also sped up the entire process by using my new Nordic Ware Griddle to cook the alternate side of the pancakes.
Instead of worrying about flipping the pancakes perfectly back into the pan, I instead flipped them onto the hot griddle. If you use this method, only one side of your pancakes will be stamped, but no one is really looking at both sides when they eat them!
You can serve theses pancakes with maple syrup, or with cinnamon sugar and whipped cream! They are lightly sweetened with the taste of gingerbread.
Overnight Sweet Potato Spinach Egg & Sausage Casserole Recipe
|2 (20 oz) bags of Alexia Sweet Potato puffs||20-24 large eggs|
|8-10 slices of bacon||1/8 cup of heavy whipping cream|
|2 pounds of ground sausage||1 ½ cups of shredded cheese|
|12 ozs of chopped frozen spinach||1 teaspoon of salt, ½ teaspoon of black pepper|
Bake 2 (20 oz) bags of Alexia Sweet Potato puffs for 30-35 minutes. Chop 8-10 slices of bacon into 1 inch sections and cook in a large pan until crisp before setting aside. After removing bacon from the pan, add 2 pounds of ground sausage to the leftover bacon grease, chopping into small bits and cooking until lightly browned. Add 12oz of chopped frozen spinach to the browned sausage and cook until spinach is thoroughly heated and mixed with meat. Drain any and all grease and moisture using a colander and dispose of grease responsibly.
Blend 20-24 large eggs with heavy whipping cream, 1 cup of shredded cheese, salt and black pepper (add other seasoning according to your taste).
Line the bottom of a 9 x 14 glass baking pan with the Sweet Potato puffs. Spoon meat and
spinach mixture evenly over the puffs. Pour egg and cheese mixture evenly over the previous ingredients and put into the refrigerator overnight.
When ready, bake at 350 degrees for 40 minutes. Remove from oven and sprinkle with cooked bacon and 1/2 cup shredded cheese. Bake for 5 minutes or until cheese has melted.
I used my Smeg blender to quickly blend the eggs, whipping cream, cheese and spices for the casserole. It looks cute on the counter and works great for blending.
French Hot Chocolate Recipe
2 1/2 ounces unsweetened chocolate
1/2 cup water
2/3 cup sugar
1/2 t salt
1/2 pint heavy whipping cream
Place the chocolate, salt, sugar, and water in a sauce pan and heat over medium-high heat, stirring constantly. Bring the mixture to a boil, reduce heat, and simmer for 4 minutes, continuing to stir. Remove the pan from the stove and allow the mixture to completely cool. Whip 1/2 pint of heavy whipping cream until soft peaks form. Fold the cooled chocolate into the whipped cream until mixed. To make the hot chocolate, heat milk over the stove or in the microwave. Add dollops of the chocolate whipped cream to your mug until filled halfway. Pour warmed milk over the whipped cream and stir until dissolved. Can also be served in coffee!
I used my new Oster hand mixer for the first time to create the French hot chocolate, and I was so impressed with its power! I was able to bring my whipping cream to soft peaks in no time at all. The mixer includes a button to soften cold butter quickly which I’m looking forward to trying. To serve the French hot chocolate, I used my new Pioneer Women Linen Mugs. They are large and feel nice to hold, perfect for a Christmas morning beverage!
Honey Mint Glazed Grapefruit
Pour 1 tablespoon of honey per grapefruit half into a bowl and add a few fresh mint leaves. Muddle the mint into the honey. Remove mint from the honey and drizzle honey over halved grapefruits. Garnish with fresh mint if desired. Serve immediately.
