This is my favorite way to serve corn! Grilled Mexican Corn is loaded with flavor and tastes like summer!
We recently purchased a new Cuisinart grill, and I’m loving the ease of tossing everything on it each night to make a delicious and effortless meal! One of my current favorite items to grill is corn. Instead of coating the ears in traditional butter and salt, the sour cream, mayo, cheese, and cilantro in Mexican Corn gives your corn the summer glow-up it deserves.
To grill corn, simply shuck the corn, place on an oiled grill over medium high heat, and turn until charred. Your corn should be charred and ready in about 8-10 minutes.
When your corn is done, remove the ears from the grill and immediately coat with sour cream/mayo mixture using a pastry brush. Sprinkle each ear with fresh cilantro, cheese, squeeze of lime, and dash of green onions. You can also coat with other desired spices such as Chile powder, pepper flakes, or Chipotle seasoning. I prefer to prepare all the ears of corn and serve on a platter, but you could also setup a Mexican Corn buffet and allow guests to top their own ears with their preferred toppings.
Mexican Street Corn is a fantastic side dish that goes well with casual fare such as hamburgers, or more gourmet fare such as steaks. I like to serve it with grilled chicken, garden tomatoes, and a side salad.

- 6 ears of corn
- 1/2 cup sour cream
- 1/4 cup mayo
- 1/4 cup fresh cilantro
- 1/2 cup fresh grated parmesan
- 1 lime juiced
- 1/4 cup diced green onions
