This sausage, egg, and pimento cheese breakfast casserole with green onions is delicious for everyone and also keto-friendly! If you’re on a ketogenic diet, this breakfast casserole is a yummy one to try!
Breakfast casseroles are the ultimate morning comfort food, and in the south all comfort food is better when served with pimento cheese! I didn’t eat much pimento cheese when we lived up in Pennsylvania, but I have grown to love it now that we live in South Carolina. After trying out numerous brands, I have to agree with the masses that Palmetto Cheese is the best! One has to overlook it’s unfortunate Comic Sans font branding and just trust that it indeed lives up to the hype. It can be found in three flavors: original, jalapeno, and with bacon. I used the original for this recipe but feel free to get adventurous and use your favorite!

Keto Breakfast Casserole Recipe: Sausage, Egg, and Pimento Cheese Casserole
- 8 large eggs
- 1 cup heavy cream
- salt and pepper to taste
- 1 pound ground pork sausage
- 1 12 ounce container pimento cheese (I use Palmetto Cheese brand. I find mine at Walmart and Costco. If you’re very strict on your carbs, feel free to make your own pimento cheese using grated cheddar, pimentos, mayo, salt and pepper.)
- 1/4 cup sliced green onion

- 8Â large eggs
- 1 cup heavy cream
- salt and pepper to taste
- 1 pound ground pork sausage
- 1 12 ounce container pimento cheese (I use Palmetto Cheese brand. I find mine at Walmart and Costco. If you're very strict on your carbs, feel free to make your own pimento cheese using grated cheddar, pimentos, mayo, salt and pepper.)
- 1/4 cup sliced green onion
Instructions
- Grease 9x9 inch square pan with preferred cooking spray. (I use Avocado oil.) Preheat oven to 350°F.
- In a mixing bowl, whisk together eggs, heavy cream, and salt and pepper. Gently fold in sliced green onion.
- Cook sausage in a skillet over medium-high heat until brown and spread in bottom of greased baking dish.
- Pour egg mixture over sausage.
- Evenly dollop pimento cheese over the top of egg mixture.
- Bake for 30 to 35 minutes until eggs are set and lightly browned on top.
- Cool for 5 minutes then cut into slices to serve.

So sorry, I don’t! I found that people become a bit stabby when I try to post nutrition facts since substitutions are different and portion size can be an issue depending on your pan size. I’ve been on keto since Jan 2018 and no longer worry about tracking but agree it’s important in the beginning! Let me know if you try it!
