I have been selected by Picnik.com to be a part of their pilot Picnik Party Program! Basically, this means I get to have some friends over for a party and share with them all the cool things Picnik has to offer. Any excuse to have a girls’ night is a good one, right? Well, I have the adorable invites covered. (I made them last night using scrapblog.com. LOVE! Didn’t they turn out so cute?)
But I need some help with my menu. I want to serve some fun picnic themed hors d’oeuvres and desserts but want something more creative than just cheese and crackers, fruit salad, and brownies. You all are amazing and have the best ideas. Help a girl out!
And just to get you in the frame of mind, here is some picnic eye candy for you!

Hi, I just came across your beautiful blog and I couldn't stop looking at all your posts. About the party, I know people like mini food you can do mini bunt cakes, mini cupcakes,cake balls(from bakerella), grissini(Martha Stewart recipe is the best) and you can offer mini sandwiches and grilled vegetables.

Lightly steam fresh asparagus and wrap each with prosciutto. Fruit salsa and cinnamon chips. Head over to the West Shore Farmers Market, there are some great stands over there!!

Chicken salad wrapped in escarole (tied in a knot to stay closed with a green onion) and fresh fruit on skewers…and of course wine!

what about ribbon sandwiches…you could cut them to whatever size you want… a yummy pasta salad, we make the cold corn salad, previosly mentioned…but we use it as a chip dip with tortilla chips, and it's yummy! Fruit and fruit dip is always good, and colorful… good luck! Hmm, I think I am needing to plan a picnic after all that mention of good food, or at least I need just make the "picnic food"!

i always think of containers of fancy little salads for picnics. {or is my mom the only one who would have cute little containers filled with salads in our picnic basket?}

I love having cheese puffs at picnics. Isn't that odd? And I always put out a lil travel size of wipes next to them.
OK – so for a lil recipe. Strawberries (or grapes or graham crackers) that can be dipped in this: Fluff whipped with Cream cheese. 1 jar fluff to 1 8oz bar of cream cheese. Mix in mixer. Divine simplicity.
And what about this one – hard genoa salami, spread it w/ cream cheese and roll up. Easy finger food.

mini croissants filled with cucumber, Havarti dill cheese, mayo and rotisserie chicken (buy it already cooked..this a a sweet little sammy my mama makes..it's her own little combo. we call it a "cindy sammy".

Wish I could help you better, but BAKING is more my specialty.. cookies, cakes, and yes, brownies!.. Loved all the table/picnic settings, but got the biggest kick out of the bales of hay for seats at the tables!!! I imagine there must have been some extra cushioning under those fabric covers… or OUCH! ~tina

So at the wedding I was at this weekend, cheese and crackers was of course served but in a very cute way! The chick doing the catering got the pre-sliced cheese packs and then used a small cookie cutter (1 inch diameter) to cut out flower and butterfly shaped cheese nibbles. It was super cute, very easy, and very springy!

Ohh I love picnics! One of my favorite picnic dishes is to make what I call ham pinwheels(I have no idea what they are supposed to be called so I go with that). You take the large burrito four tortillas and spread cream cheese(I use the chive cream cheese or sundried tomato just for more flavor) and then put a slice of ham( I use honey or smoked ham) and then of course roll them up. Chill them in the fridge for about an hour and then cut them into small slices(not too small or they unravel though). I always dress them up with different colored toothpicks depending on the occasion.
Also you can do meat and cheese puffs. You need crecent roll dough and your choice of meat( I use ham or turkey) sliced or cubed then cut into smaller pieces. Shredded cheese any kind. Unroll the crecent rolls on a bakers pad and then roll them to seal the perferations. Then cut them into small squares just about the size of a cheese slice. Put them into a greased mini muffin pan and add meat and cheese to fill them then fold any extra edges over top and bake at 300 degrees for about 30 minutes. I start checking them after 20 minutes depending on your oven. Once the tops of the crecent rolls are brown they are done.

I know s'mores are more for camping, but mini s'more cupcakes would be cute. Also how about a cold veggie salad. Peas, corn, etc..I have a recipe it you want it. It has a nice refreshing sweet falvor.

We are always doing picnics! I would suggest a cold corn salad. It's very good, easy, & tastes better & better the longer it "sits". Just combine purple onion, tomatoes, cucumber (all diced), canned corn (not off brand) & italian dressing. Very tasty! And might I add, extremely colorful!
