My mom has made French Hot Chocolate to accompany Christmas brunch every Christmas morning since I can remember…but not this year. Why? I think we were all feeling fat and over-indulged from the Christmas Eve baked brie, cream cheese piccata dip, shrimp cocktail, scalloped potatoes, homemade rolls, beef tenderloin, pecan pie, chocolate whoopie pies, and bread pudding. Have I told you that my family enjoys eating? 🙂
Well, it’s almost Valentine’s day and since I plan on working out later….eventually…some day…I decided to make myself some Ghiradelli Dark Double Chocolate Brownies (underbake by about 10 mins for soft brownie perfection) and some French Hot Chocolate.
French Hot Chocolate is basically chocolate whipped cream that you can either stir into warmed milk or coffee. It is a fantastic treat to serve with coffee at parties. I often make it for company and they ooooo and aaahhhhh over it for days after the event. Just wait and see! Your guests will love you for it too.

A tip to remember when making the hot chocolate is that you have to let the chocolate completely cool before folding it into your whipped cream. If you rush it, the warm temps will melt your cream and you’ll be left with a liquidy mess. A delicious liquidy mess, but a mess nevertheless. And yes, I speak from experience!
Gently fold the chocolate into the cream until it is completely mixed in. Also, you shouldn’t have any problem finding someone to help you clean the bowls :).

Once the chocolate is folded in your mixture will look like this. Yum. You are now ready to spoon it into your mouth mug!
Make some coffee or steam some milk and dollop away. Don’t be alarmed if it takes quite a bit of cream to sweeten it up. Be generous and enjoy!

It really depends on what you are mixing it with. If you are just doing milk, then you require more of the cream to sweeten it. And it will make around 6 cups–again depending on how heavy-handed people are with the cream. If you are using it in coffee and using it more as a “creamer” then it will go further.
