Every April and May the forest floor of our woods springs forth an abundance of tiny wild violets! Besides being beautiful, wild violets are edible and can be used to make syrup, jelly, tea, as well as garnishes for cakes, charcuterie boards, salads and more. I’ve wanted to make flower ice for cocktails with wild violets and lavender for several years now and decided that this was the year! I purchased these sphere and cube ice molds off of Amazon, foraged my flowers, created the flower ice, and enjoyed my cocktails. How to Make Flower Ice
Flower Ice Supplies Needed (click to shop affiliate links):
- Sphere & Cube Ice Mold
- French Lavender Pedals
- Foraged or dried violets
- Boiling hot water
Optional Blueberry Lavender Cocktail Supplies:
- Martini Glasses
- Blueberry Lavender Skinny Syrups
- Zero Sugar Sprite
- Vodka of choice
Flower Ice Instructions
Step 1: Clean your ice molds and dry with a kitchen towel.
Step 2: Fill your dry ice molds with wild violets, lavender, and any additional herbs.
Step 3: Boil your water to create a clearer ice cube! I boiled my water twice in a kettle and poured the slightly cooled water into the molds. The ice will expand as it freezes so be sure to leave a little room in each mold for the water to expand.
Step 4: Place your ice molds into the freezer and allow to freeze for 3 1/2-4 hours minimum.
Step 5: When ice is frozen solid, BRIEFLY run hot water over the backs of the trays to more easily remove the ice from the silicone molds.
Your cubes are ready to enjoy in your choice of beverage! I tried them in water and the slight lavender flavor and aroma was delightful.
They also look beautiful garnishing a wine ice bucket and would be perfect for a brunch, wedding, or baby shower!
Sugar Free Blueberry Lavender Spritzer
My preferred way to use these cubes is in a cocktail! Here is my recipe for a delicious and sugar free Blueberry Lavender Spritzer. In a martini glass with flower sphere, pour:
- 1 shot vodka of choice (I like Tito’s.)
- 1 shot Blueberry Lavender Skinny Syrup
- Splash of Sprite Zero
Garnish each cocktail with a sprig of lavender and enjoy!
